Trying to update the iPod again, but I can't extract any music off it. Anybody know of some good software to use to extract it?

iTunes...?

It only extracts music I purchased through iTunes. 90% of my stuff is from CDs way before I had the iPod, and had another MP3 player, so iTunes itself doesn't extract it.

Since when? I use iTunes to drag and drop music all the time on my jailbroken iPod Touch. Not sure if being jailbroken matters or not. I don't buy music.

Why can't you just connect it to a Windows computer and use explorer?

Tried it, the files aren't accessible that way.

It has to be put into disk mode for that. You can put it in disk mode using iTunes.
