Title: Lukken/Waffle Cookies
Post by: 71Caprice on May 13, 2011, 10:42:32 AM
Helped my grandma make these a couple of days ago, I remmeber someone posted about these and was talking about how much they loved them.
Here's the family recipe.

1 cup of salted butter
1 cup of brown sugar
4 eggs
2 teaspoons of vanilla extract
3 shots of whiskey
5-6 cups of flour (dough should be just firm)

Cream first 2 ingredients then add everything else.

Makes 5 to 6 dozen cookies.

We use a pizzelle maker for ours.

Ladle out dough onto the press.
Just through trial and error find how much you need to push down on the press, cookies should be from 1/8 to 1/4 inch thick.

Correctly cooked cookies IMO are a light brown with some white areas

Mmmm... pizzelles. They're very tasty. I haven't had them in a long time. Some friends of the family used to make them around Christmas.
